The founder behind the food

About Modern Gaucho

Meet Julio

Modern Gaucho begins with Julio, an Argentine home cook relocating to South Jordan and Daybreak in October 2026. He is bringing the food he actually makes to Utah families who need dependable lunches in the weekly rotation.

Two ways to fill the table

Julio’s Clásicos keeps tradition intact with beef, chicken, and ham & cheese empanadas. Julio’s Modernos brings garbanzo, lentil, soy/TVP, spinach-ricotta, humita, and squash into the same practical format—plant-based food presented because it is genuinely good, not as a lecture.

Built locally and honestly

Modern Gaucho is pre-launch. No customer orders have been fulfilled yet. The first boxes are planned for November 2026, with recurring monthly billing beginning in December. Until every operational detail is locked, Julio will say what is confirmed and what is still being decided.

Modernos will be sold direct to Utah customers under Utah’s Home Consumption and Homemade Food Act. Meat-filled Clásicos will follow the microenterprise home-kitchen pathway, made fresh weekly and delivered within 72 hours rather than held as standing frozen inventory.

Made for repeat lunches

This is not a novelty box. Modern Gaucho is being built for meal-prep-minded households in South Jordan, Daybreak, Riverton, Herriman, West Jordan, Sandy, and nearby Salt Lake County communities. The goal is simple: empanadas worth keeping in the monthly plan.
